Tomorrow, Saturday, December 30, is National Bacon Day. Sorry vegetarians. The smell of bacon on the stove is one of my all time favorites. Today it is fashionable to add bacon to all matter of things including delicious candy – the sweet and salty mix perfectly. But there is nothing like pure delicious bacon, whether cut from a slab or sliced commercially. I prepare mine with a stovetop panini pan – it allows me to press the bacon grease from it (saved in the fridge for other purposes) and have perfectly crispy bacon every time. I read somewhere that every serving of bacon you eat takes away one hour of your life. Somehow that seems a worthwhile equation.
