According to the California Artichoke Advisory Board, artichokes are a good source of antioxidants, vitamin C, folate, and magnesium. The antioxidants in artichokes are very good for your liver and help promote healthy skin. Artichokes are also high in fiber, calcium, and protein while low in calories. For all of these reasons, along with being fat-free and cholesterol-free, artichokes are truly a healthy and delicious food to celebrate!
So a good idea to celebrate them with a national day! Because of the current crisis it may be tough to get out and get fresh ones so stock up by buying canned or bottled artichoke hearts. Then make this excellent dip recipe!

Artichoke-Parmesan Dip
INGREDIENTS:
- 2 cans artichoke hearts, drained, chopped
- 1/2 cup parmesan cheese
- 1/3 cup sour cream
- 1 teaspoon chiles, canned, chopped, hot or mild
- 1 clove garlic, minced
- 1 teaspoon lemon juice
- minced parsley
- assorted crackers and vegetables
METHOD:
Combine all ingredients in a food processor and “PULSE” until artichokes are coarsely chopped and ingredients are blended. Spoon mixture into a microwave-safe dish and heat on “HIGH” power for about 2 minutes, stirring every 45 seconds. Sprinkle with parsley. Serve with crackers and vegetables.
