Today is National Taco Day and many cultures have appropriated the form to transform the humble Mexican staple into their own signature flavor. Recently the New York Times Food Section showcased a new version: The BLT Taco, so I had to give it a try. I went the simple route lining the tortilla with mayonnaise, adding the lettuce, halved cherry tomato and bacon. It was delicious. You could certainly fancy it up with the addition of sliced avocado or even guacamole, replacing the mayonnaise with aioli, adding some shredded cheese, and any number of upgrades. Try a new version for your family, you probably already have most of the ingredients in your refrigerator.
