National Pancake Day

Today is National Pancake Day.  Many cultures around the world have their own versions from crepes to blinis, from sweet to savory, filled and flat but they are all delicious.  I am particularly fond of the good old American version which needs a hot griddle, butter and syrup.  At home I use a sourdough batter and usually make it with either blueberries or a lemon/poppy seed theme.

A fun way to serve pancakes is to use as sort of pigs in a blanket that I have often made for company.  Use your taco holders, tuck a small pancake in with a cooked sausage link.  Add mustard (butter) and catsup (syrup) and you have a breakfast hot dog!
