Today is National Taco Day.  There will be plenty of special taco specials at places like Taco Bell and Del Taco and other mass purveyors of such food.

I have made Korean stylized tacos with my food kit purveyors and other corruptions of the form (and they were pretty good, more in the future).  There is also a place called Taco Mahal, an Indian food taco place here in Manhattan using naan and roti instead of corn or flour tortillas.  So the form is there, place with the style.

I am most fond of Tex-Mex originals.  Simple tortillas with ground beef, lettuce, tomatoes, shredded cheese, pico de gallo and simple sauce. Delicious, give it a try and enjoy.
