Sunday, December 24 is National Eggnog Day. Not surprising as it is also Christmas Eve. Fresh eggnog shows up in our grocery stores only between Thanksgiving and New Years Day. I once tried what was purported to be an eggnog recipe from the writings of George Washington. I cannot tell a lie, it was OK.
While I love the flavor of eggnog I try to limit intake or I carry many extra pounds around with me. I also like it as a flavor in other goodies. Most especially Graeters Eggnog ice cream, again only available in this season.
An easy special cake can be made from readily available ingredients – Eggnog Pound Cake.
Preheat oven to 350 degrees
In a large mixer bowl combine
1 box Yellow Cake Mix
1 box instant vanilla flavor pudding mix
3/4 cup eggnog
3/4 cup vegetable oil
beat on low speed until moistened
add
4 eggs
1/2 teaspoon ground nutmeg
beat on medium high for 4 minutes
Pour into greased and floured bundt cake pan
Bake 30 to 40 minutes or until a wooden pick inserted near center comes out clean.
Cool 10 minutes. Remove from pan and cool completely. Sprinkle with confectioners sugar before serving.
