As I do not have a rooting interest in this Super Bowl, I can focus on another National Day that happens at the same time. Marketers have already tied their Pork Rind Day to go with the National Pig Skin Championship. As you know pork rinds are just a polite name for the skin of a pig, fried into a salty, fatty snack. Just the way I like my snacks! Wonder if there is anything to watch on the television tonight. Gotta check the listings.
