Today is National Welsh Rarebit Day and I have a quibble. This is cheese on bread. How does this equate into a cuisine favorite? Cheese on bread. Brilliant. Shouldn’t something like this have at least three ingredients? Bread with cheese on it. How was it invented? Did a Welshman take a continental trip and misunderstand how fondue worked? Did they go to make a grilled cheese sandwich and realize they had only one slice of bread? So they poured melted cheese onto it and said, “I’ve just invented something new!” I know I will hear from all the many Welsh Rarebit Fan Clubs out there. But really, this is just cheese on bread.
